Memorial Day

On Sunday, I took Tate to the Bountiful Cemetery to see my Grandpa Cook's grave and we also lucked out and caught the bagpipers performing.  I taught him about the American Flag and we walked away with a cookie!  It was a beautiful evening.  So grateful to have spent that time with Tatum.  I hope someday he will come to learn more about his ancestors and have a respect for those who have sacrificed for our freedoms.




On Memorial Day, Chase and all the Oborn guys spent the day fishing.  They caught a lot of fish and the weather was great, so they all came home happy. We got together later for a BBQ.  I introduced a new treat called "Campfire Cones."  You simply stuff a sugar cone full of marshmallows, chocolate chips, and anything else you like (fruit, caramel bits, flavored marshmallows, etc.).  Then you wrap it up in foil and stick it in the hot coals of the fire (they can burn pretty easily, so watch carefully).  It was a fun new treat!   Always a good time with family, food and fun.

Mother's Day

In lieu of gifts this year, Chase gave me the day "off" and took all responsibilities off my plate.  You can't put a price on that!  I slept in, took my time getting ready, did some video editing, went shopping, and capped the night off with dinner and cupcakes with my mom and sis.  Great day!

...And at the end of the day, all I wanted to do was hurry home and see my family.  Couldn't be more grateful to be a mother and wife to such great boys.  Grateful for my mother and Shelley.  I truly am surrounded by incredible women.  Blessed, blessed, blessed!

Ham & Cheese Sliders

My sweet Grandma Pat made {these sliders} for our Super Bowl party this year, and they were the first thing to go!  My mother-in-law made these for Conference and they were a hit,  again.  So I couldn't help but try the recipe for myself.  Lucky number three... even Tate would eat them!  They are so simple, yet the sauce sends them over the top. I halved the recipe, but you can adjust the quantity to fit your own family.



Ham and Cheese Sliders
24 good white dinner rolls
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy seed sauce (you probably could half this...I had plenty extra)
1 Tablespoon poppyseeds
1 1/2 Tablespoons yellow mustard
1/2 cup butter, melted
1 Tablespoon minced onion
1/2 teaspoon Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

** sandwiches can be assembled a day ahead and kept in the fridge ready to bake.

Lemon Blueberry Cake

Looking for the perfect Easter dessert? Look no further...

This just might be my new favorite cake (although Plates & Palates coconut cake is a very close second). When I first tried this cake at a church activity, I begged my friend for the recipe. I've seen it popping up around Pinterest lately too (see the recipe here). If you're a sucker for lemon, this cake will curl your toes!


I made the lemon curd filling the night before.  I have never made curd before, but I literally ran downstairs and shoved my finger in Chase's mouth and exclaimed, "Isn't that the most delicious thing ever!?"  I felt like Julie in "Julie & Julia."  Can't remember the last time I got that excited over cooking something (ok, maybe when I tacked the macaroon).  But, to me, it was that good.  In my opinion, the curd is what puts this cake over the top.  Ok, so here's the recipe:

Lemon Curd

Ingredients 
6 large egg yolks, strained
Zest of 1 lemon
1/2 cup lemon juice
3/4 cup sugar
8 tablespoons (1 cube) unsalted butter, cold, cut into pieces

Directions 
Combine yolks, lemon zest, lemon juice, and sugar in a small saucepan. Whisk to combine. Set over medium heat, and stir constantly with a wooden spoon, making sure to stir sides and bottom of pan. Cook until mixture is thick enough to coat back of wooden spoon, 5 to 7 minutes.  Remove saucepan from heat. Add butter, one piece at a time, stirring with the wooden spoon until consistency is smooth (be patient). Transfer mixture to a medium bowl. Lay a sheet of plastic wrap directly on the surface of the curd to avoid a skin from forming; wrap tightly. Let cool; refrigerate until firm and chilled, at least 1 hour (or the night before).  Makes 3 cups.



and now for the cake...

Lemon Blueberry Cake

Ingredients
2 cups plus 6 tablespoons all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
3 cups fresh blueberries
1/2 cup sour cream
1/2 cup whole milk
2 teaspoons vanilla extract
3/4 teaspoon pure lemon extract
1 teaspoon lemon zest
1 cup (2 sticks) unsalted butter, softened about 20 minutes out of refrigerator
1 1/2 cups white sugar
4 large eggs

Method
Preheat oven to 350°F. Prepare three 8" round cake pans ( or I used two 9" round pans) with parchment paper, butter and flour. Sift dry ingredients into medium bowl. Transfer 1 tablespoon flour mixture to larger bowl. Add fresh blueberries and toss to coat them with flour. Set remaining flour mixture and blueberries aside.

Stir whole milk, sour cream, vanilla extract, lemon extract and lemon zest in small bowl. In the bowl of a stand mixer, cream butter and sugar, until pale yellow and very fluffy, about 5 minutes. Beat in eggs one at a time, until well combined. Mix in flour mixture alternately with milk mixture, starting and ending with flour mixture. Stir until just combined. Gently fold in blueberries. Divide batter equally among 8" round pans.

Bake cakes until toothpick inserted into center comes out clean, about 25-30 minutes. Cool cakes in pans on racks for about 10 minutes, then invert onto racks until completely cool. Cut tops level so they stack nicely.




Zesty Lemon Frosting

1 cup soft unsalted butter
2 teaspoons lemon zest
5 cups icing sugar (or 6 cups for sweeter, thicker version)
1/4+ cup or 60 ml fresh lemon juice
6 tablespoons whipping cream
1/2 teaspoon pure lemon extract
2 tablespoons water
pinch salt


Method
Cream butter and lemon zest in bowl of electric mixer fitted with paddle attachment, about 3 minutes. Slowly add icing sugar, mixing on low speed for about 2 minutes. Add remaining ingredients and beat on med-high for 3-4 minutes until very fluffy. Yields enough to frost outside of three layer 8" round cake.



Assembly 
Transfer one cake layer to a board or cake stand.  Spread the top with a generous amount of lemon curd.  Top with another cake layer. Add more curd.  Add final cake layer. Frost the entire cake.  Add berries, sliced lemons, or even coconut as decor (optional).  Keep refrigerated until ready to serve.





... and best of all, slice and serve!


I shared the cake with the extended Oborn clad during our annual General Conference get-together.  We had a great dinner (and dessert.. he he), followed by games.  This family loves to play games, so I introduced a new game called "Three Deep" to the group.  You basically create teams of three with words.  For example, a "color" team would have words such as "red (bottom)," "green (middle)," and "blue (bottom)" all on a separate piece of paper.  Or you could create a "movies" team, with the words "Titanic (bottom)," "Dumb & Dumber (middle)," and "The Sound of Music (top)."  Simply get creative and think of three words that create a "team."  Then, next to each word, you write the word "top," "middle" or "bottom."  I typed-out a bunch of words/teams ahead of time. Once you've created the exact amount of words for participating players, you put the pieces of paper on the floor and yell "GO!"  Everyone runs to the middle and grabs a piece of paper.  Then you start yelling out your word on the paper.  It gets really loud (and really funny to watch).  Once you find others whose words fit within your "team," you find a place to sit "three deep," with the correct person sitting on the bottom, middle, and top.  The last team standing is out.  They keep their papers and everyone else puts theirs back in the middle.  You repeat this process until the last two groups battle it out for the win.

It's a loud, fast-paced, and super fun game for a big group!

Olive Garden Minestrone Soup

Olive Garden's minestrone soup is always my favorite thing to order!  So I found this recipe {here} and made a few adaptations.  Pretty darn close to Olive Garden's.  Delish and oh so healthy... so you don't feel as bad eating so much of it!

Ingredients

2 tablespoons olive oil
1/2 cup minced white onions (about 1 small onion)
1/4 cup chopped zucchini
1/4 cup frozen cut italian green beans
1/4 cup minced celery (about 1/2 stalk)
2 teaspoons minced garlic (about 2 cloves)
4 cups Swanson vegetable broth

1 (15 ounce) can red kidney beans, drained
1 (15 ounce) can small white beans or great northern beans, drained
1 /2 (14 ounce) can diced tomatoes
1/2 cup carrots, julienned or shredded
2 tablespoons minced fresh parsley
1 teaspoons dried oregano
1 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1 1/2 cups hot water
3 cups fresh baby spinach
1/3 cup small shell pasta

Directions

Heat two tablespoons of olive oil over medium heat in a large soup pot. Saute onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent. Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices. Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes. Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency. Serve with shredded Parmesan cheese!

Makes about eight 1 1/2 cup servings.

surprise package

Chase and I have a love affair... with popcorn that is.
And not just any popcorn... but this kind:


So when all of our local stores pulled it from their shelves, we were devastated!
Our nightly cravings could not be satisfied.
Of course you can order it on Amazon, but you pay twice as much plus shipping.  Poo.

So, my sister-in-law Rachelle, who lives in South Dakota, caught wind of this and went on the search.
And that brings us to this little gem:


A box loaded with our favorite popcorn, a redbox code, and treats!!!
It totally made our day (and weekend).

TOP SECRET party

I'm going to keep this G-rated, but Allie and I hosted a Pre-Valentine's Day lingerie party with some friends.  It was simple a way to get together with the girls, do a "gift" exchange, giggle a lot, and enjoy some yummy food.  Thanks for coming ladies!

I saw the idea for these heart/booty/boobie cookies on Pinterest, and they were so fun (and time consuming) to make.  Allie and I giggled the whole time... but I think they turned out cute!



To make these cake pops, I simply mixed crumbled chocolate cake donuts with a little frosting.  I formed them in a ball,  inserted striped paper straws, and refrigerated them until firm.  Then I dipped them in white and cherry chocolate, then decorated. So yummy.




We had fun taking a quiz, playing a "guess what's in the sock" game, and then a gift exchange.
